Super Easy Low Carb Enchilada Sauce Recipe
Store bought enchilada sauce can have quiet a bit of carbs in it and if you are eating low carb, or keto, it’s fairly easy to create your own great tasting enchilada sauce with this authentic homemade enchilada sauce recipe.
Better yet, this is a gluten free enchilada sauce recipe which is important on a ketogenic diet, as we wish to avoid it since it is not good for our intestines and can also spike our insulin levels.
On to the Recipe…..
2 Net Carbs per serving
- 3 tablespoons tomato paste
- 2 cubes chicken bouillon
- 1 bay leaf
- 1/4 cup chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 packet sweatleaf stevia (shown below)
- 1/16 teaspoon ground clove
- 1/16 teaspoon ground cinnamon
- 1 bay leaf
- 2 tablespoons butter or olive oil
Put all of the ingredients, including stevia, into a medium cooking pan and cook on medium heat.
Simmer, stirring occasionally. The enchilada sauce will reduce somewhat and still be of a thin consistency, but will thicken upon cooking in oven with enchiladas.
Remove and discard bay leaf before adding sauce to enchilada casserole.
