I bought an HEB salad the other day, it had avocado and mayo salad dressing in it. OMG, so freaking delicious!

The Best Way to Cut an Avocado

Now, some of you may not like the old hit the seed with a knife and twist it out – it’s dangerous for those who can’t seem to conquer this, there is a well known term to some who have ended up in the emergency room! It’s “avocado hand!”

Since we are talking about food here, I won’t go into gory details.  But if this is you, there is a product out there for you that solves this problem! ~And you’re going to need it with all those yummy very healthy avocado’s that you are going to be eating!

This is the product I am taking about:  The OXO Good Grips 3-in-1 Avocado Slicer shown here.  It’s a great product and easy to use.  I HIGHLY recommend it.

Now, if you don’t have or want this product, you need to use a heavy sharp knife to remove the seed. If you don’t want to do that, try running a spoon around the entire seed and popping it out; it works but sometimes messes up the avocado meat, which is no bother if you are making guacamole, but does leave it unsightly if you want pretty slices of avocado.

For your “Easy Avocado Salad for the Keto Diet” you will want to cut it as small as possible so you can easily mash it up.

Easy Peesy:

  • Remove the Seed
  • Cut slices with your knife long wise and width wise into each side of the avocado. (Make a grid)
  • Spoon it out into your bowl
  • Use a fork to mash it up – better yet, use a Molcajete they are so easy to use and really a de-stresser! The granite stone bowl shown here feels so great in the hands!

 

Now let’s get to it shall we?

Easy Avocado Salad for the Keto Diet

You will need:

  • 1 medium avocado
  • 6 cherry tomatoes diced (so much more flavor than larger tomatoes)
  • 1 diced green onion; use the top as well, as long and the stems look nice
  • A large pinch of chopped lettuce.  I used the pre-shredded lettuce here, but you can add a lot of vitamins getting better leaf lettuces.
  • Pinch of cilantro leaves, chopped
  • Tsp of lemon or lime juice
  • 1/4 tsp Garlic Powder
  • Pinch of Tumeric 
  • Dash of Organic Cayenne Pepper
  • Salt and Pepper to Taste

Instructions

Take your mashed avocado and place it into a bowl.  Add lemon, onions, tomatoes, lettuce, cilantro, lemon or lime juice, garlic powder, tumeric, cayenne pepper. Then salt and pepper to taste. Mix it all up. NOM NOM.

  • Estimated less than 2 carbs per serving.

    If you use one of those masher deals you can crush garlic cloves in there with the lime and cilantro before adding the avocado. Of course you must really LOVE garlic (I do).

      I do LOVE garlic! I have never found a good masher I used a knife and chop as small as I can. ***When I got pneumonia going on 3 years ago now, and rounds of antibiotics did not work, I ate 3 cloves of garlic a day. Believe me you can get a taste for it!
